I don’t know anything I love more than guacamole. In fact, I had some for breakfast. It’s so good to your taste buds and to your body. It’s the best thing ever. Avocado-y lime-y onion-y garlicky cilantro laced goodness topped with tomatoes. It’s the bees knees. I make it in large portions, about 3 cups, and share with friends (or eat it by myself for like three days). You could half this recipe, but then you would have less guacamole. Who wants less guacamole?!
Makes about 3 cups
2 limes, zest and juice
1/4 of red onion, diced
5 cloves of garlic
One medium tomato
Cilantro (I put about a handful which is a lot, you could put a little or none, depends on your preference)
Very easy directions. I mix everything except the tomato in a food processor and then once everything is thoroughly mixed I top with diced tomato. You could diced everything small and mix by hand, but I like the food processor for guacamole. Makes life easier. Enjoy!
