Greetings! Welcome to Rachel Cooks Vegan. I’m happy to have you here!
I started this blog in 2013 to document my triumphs and failures of cooking vegan. Since then it has become so much more!
I became vegan while living in Okinawa, Japan. Before this lifestyle, I knew how to cook three things. Spaghetti, roasted chicken, and Zuppa Toscana. After watching Vegucated and doing the vegucated six week challenge, I decided to change my eating habits and learn how to cook. As if living Okinawa wasn’t already an adventure, I started on the vegan journey while living here. There’s something truly special about learning to cook at home. Your kitchen becomes your orchestra. Every dish you make is a new symphony of flavor, a triumph, a masterpiece. Or it ends up being a dud and you eat guacamole and chips for dinner. One thing is for sure, I have never had more fun in the kitchen or been more proud of my food.
I also write about other things that have come with this new lifestyle. Vegan products, events, other vegans I love (I worship the ground Isa Chandra walks on), and small businesses who make vegan items.
A little about my life-
I was raised in Florida, that’s where I met my husband. We were high school sweethearts. Now we are happily married and he is a SSgt in the United States Air Force. We are both vegans. He works in communications, and my passion is working in veterinary offices. What can I say, I can’t stay away from animals.

I miss Okinawa so much! Wish I could’ve stayed another two years. Make sure you go eat at Dechibica and Cafe Sprout in my honor! 🙂
